Golden Nuggets with Feta & Tomato Salad

Ingredients
Let’s Eat Plant Based Golden Nuggets
Cos Lettuce
Rocket
Mix of fresh herbs
Feta
Cherry Tomatoes
Avocado
Red Onion
Seeds
Balsamic Dressing
Method
Preheat Oven to 200ºC.
Place Let’s Eat Nuggets onto a lined oven tray and cook for 20-25 minutes.
Prepare the salad, wash and roughly chop cos lettuce, wash rocket and herbs.
Chop the cherry tomatoes into halves and slice the avocado and red onion.
Bring the ingredients together in a bowl, adding the crumbled feta, seeds and balsamic dressing into the salad.
Plate salad and top with Let’s Eat Nuggets.
